HOW TO PREPARE TONIC SOUPS / TEAS

METHODS OF PREPARING TONIC SOUPS
There are several methods for preparing Tang, Medicinal Soup, Tea, Juice, Congee.
We will describe a few different methods here. Some formulas call for specific preparation methods, if there are special instructions they will be listed on the Formulas page. If a formula has specific instructions, they will supersede the instructions on this page. Tonic Soups should be cooked in an earthenware pot, pyrex, porcelain, Stainless Steel,
***** Never use Brass, Iron, Aluminum Pots, or Heat in microwave *****
***** Only use Clean Drinkable Water. Purified or Bottled if Necessary *****
** as a General Rule of Thumb the Typical Serving Size for Soup or Juice is 4 - 8 Ounces, or One Small Bowl or Cup. 1-2 Times per Day.**

 

METHOD OF PREPARATION # 1 (Small Formulas, 1 - 2 Ounces)

  • Add Herbs to Bottom of Pot
  • Add 1 Bowl of Water, and make a mental note of the height of the Liquid in the Pot.
  • Add 2 more bowls of water (3 Bowls total) and Let Herbs Soak for 10 - 20 Minutes
  • Cover Pot and Bring Water & Herbs to a Rapid Boil.
  • Once boiling Slide Cover to one side (to allow steam to escape) Reduce heat to a Simmer and Cook until 1 Bowl of Liquid (as noted) Remains. Usually 15 - 45 Minutes.
  • Strain Herbs from Liquid and Save, Allow Soup to Cool to a reasonable temperature, Drink While warm.
  • Herbs may be Brewed again for a Second Cup. When this is Done Boiling is not necessary. Simply Simmer until 1 Bowl remains.
  • Alternately this second Cooking can be Done before the First Bowl is Consumed. The two Cookings can then be mixed together.
    One Bowl is consumed immediately the Second Saved for later or the following day. Reheated before Consumed.


    METHOD OF PREPARATION # 2 (Med. - Large Formulas, 2 - 4 Ounces)

  • Add Herbs to Bottom of Pot
  • Add 4 Cups of Water, Cover and Bring to a Rapid Boil
  • Once water has Boiled, Slide cover to one Side (to allow steam to escape) Reduce to a Simmer and cook for 40 Minutes.
  • Strain Herbs From Liquid. Place Liquid in a Bowl or Jar, and Replace Herbs in the Pot.
  • Add 3 Cups of Water to the Herbs and return to a Boil
  • As soon as the Water Boils, Reduce to a Simmer and Cook for for 30 Min. with the Lid Slightly Open.
  • Once Cooked, Strain out the Herbs and Discard. Mix the Two Cookings together thoroughly.
  • Store in Glass Container in refrigerator and Reheat for Use.


  • METHOD OF PREPARATION # 3 (Large Formulas, 3 Ounces or More)

  • Add Herbs to Bottom of Pot
  • Add 6 Cups of Water, Cover and Bring to a Rapid Boil
  • Once water has Boiled, Slide cover to one Side (to allow steam to escape) Reduce to a Simmer and cook for 40 Minutes.
  • Strain Herbs From Liquid. Place Liquid in a Bowl or Jar, and Replace Herbs in the Pot.
  • Add 5 Cups of Water to the Herbs and return to a Boil
  • As soon as the Water Boils, Reduce to a Simmer and Cook for for 30 Min. with the Lid Slightly Open.
  • Once Cooked, Strain out the Herbs and Discard. Mix the Two Cookings together thoroughly.
  • Store in Glass Container in refrigerator and Reheat for Use.


  • METHOD OF PREPARATION # 4 (Preparing a Gallon of Soup)

    • Add 6 - 10 Decoction Packs, or One Tonic Wine Herb Kit to Pot
    • Cover with 1 Gallon of Water and Make a Mental Note of Height of Liquid in Pan
    • Add an additional 1/2 - 1 Gallon of Water
    • Cover Pot & Bring Water to a Rapid boil
    • Once boiling, Uncover & Reduce to a Simmer
    • Cook Herbs until 1 Gallon of Soup Remains, Approx. 1 -2 Hours
    • Strain Herbs from Soup Discard
    • Store Tonic Soup in Glass bottle and Refrigerate
    • Reheat Tonic Soup Before Consuming
    • It is only advisable to Prepare Tonics This way if they are being taken on a Consistent basis.
    • This gallon of Soup Should be Consumed within 7 - 10 Days, so it will not become moldy in Refrigerator

     

    METHOD OF PREPARATION # 5 (Nourishing Herbal Soup Stock)

    • Add Herbs to Large Pot (1 - 4 Decoction Packs - 1 - 2 Suggested)
    • For Soup Stock it is Suggested that the Herbs Be sealed in a Flow through Bag, Just Ask we Will Happily do this for you
    • Add 3 - 4 Pounds of Organic Chicken as well as any desired vegetables
    • Fill Pot with 1 - 2 Gallons of Water
    • Boil for 2 Hours. Check Chicken to make sure it is Cooked. Continue Cooking if Necessary.
    • When Cooked Remove Herbs and Enjoy
    • Feel free to experiment with Other Meats and vegetables. Just be Careful to ensure that all Meats are thoroughly Cooked before Consuming.

  • As a General Rule of Thumb Hard and Dense Herbs Like Root are Cooked Longer than Light Herbs Such as Flowers and Resins also many fragrant Herbs Like Cinnamon, these lighter herbs are often added only in the last 10 Minutes of Cooking.
  • For many of the recipes that use Ginseng There is what is called a Poor Man's Modification.
    The Ren Shen(Ginseng root) in the Formula is Replaced with 2 -3 times as much Dang Shen (Root of Codonopsis). This is used when Ginseng is to expensive. Or simply when a weaker less warming effect is desired.
  • Decoctions Containing Ren Shen (Ginseng) or Ma Huang Should not be taken by those with high Blood Pressure or Heart problems
  • These Tonic Soups should be Taken Under the Supervision of a Trained Herbalist, or under the Advise of a T.C.M. Doctor
